 PINK SALMON WITH GARLIC EMULSION 

 

1 fresh salmon fillet

1 clove of garlic

juice of 1/2 lemon

2 tablespoons of olive oil

1 sprig of rosemary

1 pinch of salt

Pepper to taste      


PREPARATION 

Step 1

In a deep plate, mix the oil, lemon juice, salt and pepper and add the sprig of rosemary so that it becomes fragrant. 


Step 2

Chop the garlic very finely, and crush it with the same knife (I recommend a large blade) until it forms a paste. Add it to the oil mixture, mixing well to combine. 


Step 3

Pass the salmon through the mixture and leave it for one or two minutes, no more so that it does not cook with the lemon. 


Step 4

In a hot iron skillet or griddle, cook the salmon for about 4/5 minutes per side, until it turns golden brown, but do not let it dry out, it has to be cooked on the outside but with a tender center. If necessary, lower the heat so that it does not overheat (depending on your kitchen). You can cook it with the sprig of rosemary to give it more flavor. Eat very hot.
