MY LENTIL STEW
Ingredients: Makes 6 servings
Lentils: 500g
Onions: 2
Red bell pepper: 1
Carrots: 2
Smoked bacon: a piece of about 100g
Red chorizo: 1
Potatoes: 2:
Tomato sauce: 700cm3
Paprika: 1 teaspoon
Pepper: To taste
Ground chili: 1 pinch
Sal: To taste
Procedure
Step 1
Soak the lentils in water for about 2 hours
Step 2
Cut the onions, bell pepper and carrots into squares of the same size. Sauté in a saucepan with a little oil for a few minutes.
Step 3
Add the bacon cut into small pieces and sauté for a few minutes with the rest of the vegetables (at this point you can add a splash of red wine).
Step 4
Cut the red chorizo and add to the rest of the ingredients, then add the lentils previously soaked with a little of the soaking liquid and the diced potato.
Step 5
Add the tomato sauce and stir to integrate everything. The ingredients have to be submerged in the liquid. Season with salt, pepper, paprika and a pinch of ground chili.
Step 6
Once it boils, lower the heat to low and cook for about 35/45 minutes until the lentils, potatoes and carrots are tender. Turn off the heat and let it rest for a few minutes before serving. It is always tastier the more it rests, in fact if you can make it the day before or the same day in the morning, the better.
