FLUFFY POTATO CAKE
INGREDIENTS:
Potatoes: 500 g
Minced meat: 500 g
Onion: 1
Eggs: 4
Olives: 50 g
Raisins: 50 g
Grated cheese: 2 tablespoons
Nutmeg: 1 pinch
Salt: 2 teaspoons
Pepper: to taste
Paprika: a teaspoon
Butter: 1 tablespoon
Oil: 2 tablespoons
Procedure:
Step 1: Boil the potatoes in their skin, from cold water, salt for 20/25 minutes until tender. (prick with a fork to see if it is there)
Step 2: In a frying pan, sauté the onion and when transparent, add the minced meat and season with salt and pepper, cook for about 6/8 minutes.
Step 3: Turn off the heat and add two hard-boiled eggs, the cut olives and the raisins to the meat preparation.
Step 4: Crush the potatoes and make a puree, season with salt and pepper to taste and add the nutmeg and grated cheese.
Step 5: Beat the egg whites until stiff and add them to the puree with soft, enveloping movements.
Step 6: In an oiled baking dish, place a small base of the puree and then the meat mixture.
Step 7: Cover with the rest of the puree and rake with a fork. Sprinkle with a little grated cheese to gratin, paprika and a few squares of butter.
Step 8: Bake for 25/30 minutes in a moderate oven. Serve very hot.
